My Favorite Chicken Piccata

This chicken piccata recipe is one of my favorites. It’s the perfect meal for date night or a dinner party with friends. I usually serve it over Parmesan white rice (recipe is below), along side a green salad.Read on for a meal that is sure to please the pickiest palettes.

Serves 2

Ingredients:

2 Chicken breast-skin removed

1/3 cup flour- 1 1/2 teaspoon reserved

2 Tablespoon butter

2 Tablespoons Olive oil

Salt and Pepper to taste

1 Shallot Finely topped

1 teaspoon minced garlic

1 ½ Tablespoon Capers-drained

1 Tablespoon fresh lemon juice

1/2 cup chicken broth

1/2 cup white wine

Directions:

Place the chicken between wax paper or plastic wrap and using a mallet or hammer, pound chicken to an even thickness of about ½ an inch.

Season the chicken breasts salt and pepper to taste, then dredge in flour

Put a skillet over medium high heat and add 1 Tablespoon of butter and 1 Tablespoon Olive oil to the pan

Once melted and lightly sizzling, add chicken breast. (Chicken should sizzle when it hits the pan. If not, the pan is not hot enough) Sear until browned on each side, then lower temp to medium/ medium low cover, and cook through. You will have to flip the chicken once or twice. Don’t let it burn. Remove chicken from the pan and set aside

Lower heat to medium-low and add 1 Tablespoon of olive oil to the pan. Allow to get hot then add garlic and shallots

Cook until shallot is translucent, about 3 minutes, while scraping bits from the bottom of the pan

Mix in the remaining 1 1/2 teaspoons of flour and incorporate with garlic and shallots
Slowly add 1/2 cup of wine to the pan and allow to cook until mostly absorbed, stirring regularly

Slowly add 1/2 cup of broth to the pan and allow to reduce-about 10 minutes while mixing regularly.

*Continue scraping up bits from the bottom of the pan while mixing ingredients until the sauce is a syrup consistency

Add lemon juice and capers and cook for and additional
2 minutes

Quickly whisk in the remaining tablespoon of butter

Pour the sauce over the chicken, garnish with parsley, and enjoy!

Rice Recipe:

If you’re cooking for two sauté ½ cup of rice with a teaspoon of olive oil, half teaspoon of salt,  half teaspoon of pepper , and a teaspoon of garlic. Simply add all ingredients to a saucepan and cook for about 3 minutes while incorporating ingredients. Then add 1 cup of water and cook rice according to the instructions on the box. Once water is absorbed add 2 tablespoons of parmesan. Mix well.
